I met a guy named Mike Johnson at CAAS who use to live right above Lenny Breau and I got to know him quite well at the convention. He showed me a strat style guitar that he purchased at NAMM. It had the most comfortable wide playing neck I have ever seen on a strat. Paul would have loved the feel of this neck. It's made by a company called Big Lou. The guitars are inexpensive and I believe you can just purchase the necks.

I think you can get a similar neck from Warmoth, but I may be thinking of 1-3/4" (which would probably be just fine for me.

I have a 1 7/8" neck I got from Warmoth. I've found that I can switch from classical to electric without much adjustment. As I recall, you can select fingerboard radius and neck profile. My son Jay plays my electric now. He also plays a Takamine classical with a 2", flat profile, neck. Jay's hands are bigger than mine and he grabs a bass note with his thumb on occasions.
